March 25th is considered the International holiday while August 24th is the American National Holiday. I decided to place National Waffle Day on March 25th for the purpose of having a family friendly food holiday each day.

Waffles have been baked in waffle irons since the European medieval times. Back then irons were placed over a fire and were commonly sold outside of churches on Saints days and other religious holidays. The vendors became quite fierce in competing for waffle sales that King Charles IX of france ordered that each vendor had to be at least 6 feet away from each other!

Cake recipes have been cooked between metal plates for even longer though. The 13th century Greeks cooked flat cakes between two metal plates and served with cheese and herbs.

Waffles were introduced to America by the pilgrims. European waffles are leavened with yeast while American waffles are leavened with baking powder. Hong Kong also has its own version of the waffle.
