Ancient apricots are believed to have been first discovered in China during 2000 BC. The Chinese cultivated that ancient fruit into todays apricot. Apricots were introduced to the Americas by Spanish explorers. The Spainiards planted apricots in the gardens of Spanish missions in California. California produces 95% of American Apricots.

Apricots are in season from Mid May - early July so compared to most fresh produce, apricot season is short lived. When buying fresh apricots be sure to choose ones that are plump and fairly firm. Do not buy green apricots, they will not ripen. Do not eat the Apricot kernel unless it is roasted because until you roast it the kernel is poisonous.

People often wonder what the differences are between peaches, apricots and nectarines. A peach is fuzzy and sweet, apricots have a little fuzz and a tarty taste while nectarines are smooth and sweet.
