What better way to the year off with a bowl of healthy homemade soup. Even if you live somewhere it is warm in January there are plenty of recipes for delicious cold soups.

Many food historians believe that soup was one of the first meals ever cooked and probably the first item served in restaurants. Soup came from the word ‘Sop’ which was broth poured on top of bread was called during the middle ages. Supper also comes from the word Sop as in those times the evening meal was the lightest meal.

Soup is the perfect comfort food and has many health benefits such as helping us recover from illnesses quicker and giving us a feeling of fulness on less calories.

The origin of the Cream Puff is not completely certain. Many food historians believe that they existed in England during the 16th century. The believe the English got it from France and the french aquired cream puffs from Italy. Wherever they came from they are now a popular dessert all over the world. The fillings may either be ice cream, whipped cream or pastry cream. They are delicious plain but the possibilities of toppings are endless such as chocolate sauce, fruit or powdered sugar (icing sugar).

Whipping cream is made by whisking air into cream that has between 30-36% fat. Whisking the air into the cream creates a soft solid. There are also many Whipped Cream Chargers on the market that use nitrous oxide to create the whipped cream. Cool whip or whipped topping is an immitation of whipped cream; It contains no cream or dairy.

The history of how whipped cream came to be is unknown. Perhaps it was noticed when people tried to make butter in a hurry?

A simple recipe to make whipped cream is:

Whip 1/2 pint of cream (make sure it is cold) in a bowl. Be sure not to over mix or you will end up with butter.
When cream begins to thicken add 3 tbs of sugar and 1 tsp vanilla.
Stir and refridgerate.

Shortbread is traditional recipe from Scotland, it evolved from the Mideval biscuit bread. The main difference is that shortbread has butter instead of yeast. Butter in Scotland has a higher butterfat content 86% compared to 80% in North America.

Shortbread is a common celebration food in Scotland. It is sometimes broken over the head of a new bride and eaten during holidays such as Christmas and New Years.

The traditional shape of shortbread is a circle that has been cut into triangles. Food historians believe that this design represented the sun, which leads some people to believe that shortbread was inspired my the Pagan yule cakes (sun cakes) which the Pagans ate on New Years Eve.

Today you often see sticks of shortbread as well as assorted shapes. Chocolate, jelly and nut topings are also increasing in popularity.

Celebrating National Oatmeal Month in January is very fitting as this is the month of the year when consumers buy the most oatmeal. Oatmeal is a popular hot breakfast cereal in many countries, there are a variety of toppings people put on their oatmeal such as sugars, fruits, syrups and milk. Oatmeal is often used as an ingredient in breads, cold cereals such as granola and even in beauty products such as scrubs and lotions.

Oatmeal has many health benifits. They help satisfy your hunger longer than many foods, help lower cholesterol (it is the grain that contains the most soluable fiber) and the reason why it is used in many beauty products because it heals dry itchy skin.

Ancient apricots are believed to have been first discovered in China during 2000 BC. The Chinese cultivated that ancient fruit into todays apricot. Apricots were introduced to the Americas by Spanish explorers. The Spainiards planted apricots in the gardens of Spanish missions in California. California produces 95% of American Apricots.

Apricots are in season from Mid May - early July so compared to most fresh produce, apricot season is short lived. When buying fresh apricots be sure to choose ones that are plump and fairly firm. Do not buy green apricots, they will not ripen. Do not eat the Apricot kernel unless it is roasted because until you roast it the kernel is poisonous.

People often wonder what the differences are between peaches, apricots and nectarines. A peach is fuzzy and sweet, apricots have a little fuzz and a tarty taste while nectarines are smooth and sweet.
