February 6th: celebrate National Sweet Potato Month

Sweet Potato’s are highly nutritious being a great source of Fiber, Vitamins B6, A and C , Potassium and Manganese. It is also low in sodium, cholesterol and fat. This food was the main source of nutrients for the soldiers during the Revolutionary war.
Sweet potatoes are a Native American plant. Today North Carolina, California, Mississippi and Louisiana are the leading Sweet Potato producers in the US. Sweet Potatoes also grow in Asia and South America.
George Washington Carver developed over 100 different uses for Sweet Potatoes including dyes for cloth, flour, postage stamp glue and rubber.
When choosing Sweet Potatoes to buy be sure that they are firm and dark without bruises or sprouts. Store them as you would white potatoes in a cool, dark and dry place.
Use sweet potatoes as a substitution for white potatoes. Also great for one of baby’s first foods, just puree in a blender. Add to stir fry’s, casseroles and soups.
