There are several different stories of how Eggs Benedicts came to be varying from orignating from New York To France. The frence version consists of cod and eggs on fried bread topped with a hollandaise sauce while the North Eastern United States version consits of Ham or bacon on an English muffin half topped with a hollandaise sauce.

Perhaps the American version derived from the French version or maybe there was more than one Eggs Benedict inventor?

Today there are more varieties of Eggs Benedicts than stories of it’s orignations. Besides toast or English muffins breads such as waffles and biscuits are also used. A variety of meats and vegetables are used in place of the traditional ham or bacon.
